Hi, I’m trying this for the first time and I’m having a really really hard time getting all the flour mixed in. The dough ball isn’t even sticking to itself as I knead it. Help!

If the dough is to dry, add warm milk a little at a time, and you need to knead it to mix in everything properly. The end result should an elastic and sticky dough.

Thank you Eddy. I only landed up using 10 cups of flour because the dough was really dry and hard. I added a little milk as you suggested to the mix I had so time will tell how it turns out.

How big, in grams, would each ball be? And how would you get that perfect thumb print to fill with custard or sweet fillings?

I cut the recipe in half but I think I lost track of how much flour I used. The dough seemed a bit try my moms was a bit wet and sticky as I remember. My mom used to make these for us as a treat. This is the closest recipe I found to what I remember my mom making although she didn’t put in the lemon neither did I. All and all they cam out pretty good. My wife who never had them thought they were really good. I will definitely make these again. Thanks for sharing.

It's sad that I can't eat these anymore. Went Fri 234 to 188. These just have too much fat and sugar and are no longer part of my diet. Sad

Certain places in the Azores and Madeira make their Malassadas and Sweetbread with Lemon flavoring and others don't. Personally, I don't care for it and would leave it out. It can be replaced with a teaspoon of vanilla if you want.

You must of done something wrong Sue, haven't received one complaint about this recipe yet, specially about them being dry or to much lemon. There's a simple technic about getting them to look like on the photo, you have to strech them out then add them to the hot oil.

I personally wouldn't freeze these Jill, they may get a little soggy, but if you do, don't add any sugar to them before you do.

I’m a beginner cook so I follow a recipe he’s implicitly. I said aside that 1 teaspoon of salt, but the directions never said when to add it. After I needed the dough and started to clean up I noticed the salt. When is this supposed to go in?
