This is very similar to chicken franchaise, which I make all the time.

Very interesting Laurinda, it is probably the Portuguese version of it.

Many of your recipes have wine in them. I love your recipes but I never have wine. Is there someting else I can use instead of wine or can I just leave it out?

The Chicken Fricasse was wonderful. I used my Heavy Stock Pot. And I made extra gravy and cooked dumplings in the liquid as my aunt did.

Last time I had this is when I was doing. My military service back in 1985. My mom made it for on one of my R & R weekends. Ate like a priest. Tried to cook it after my military service just never got it as good my mom's.

Countless years ago my aunt made Fricasse Chicken in the deep sell on her stove. (Remember the stoves with those in the 40's). Then she added dumplings. As a little girl that was my favorite food. I will try this and hope it's similar.
