    Hi Maria, I don't know, it could be the sauteed onion and garlic, we make this soup all the time but don't remember what that could be.

    It's most likely the lentils which can get either brown or green. Don't use the tiny French lentils (eh puy) they'll totally disappear in this soup.

    This was really good. I was going to follow it exactly, but after I started I used the whole can of diced tomatoes and the whole can of chickpeas. I don't think it took anything away from the original.
