This stew features tender fava beans, paired with slices of chouriço, a smoky, garlicky Portuguese sausage. The chouriço adds a rich, slightly spicy flavor that complements the earthiness of the fava beans. This hearty stew is typically served with crusty bread to soak up the savory sauce.

 

 

Ingredients:

  • 1 large onion
  • 1/2 cup of extra virgin olive oil
  • 3 tablespoons of fresh parsley (plus more for garnish)
  • 2 tablespoons of hot pepper sauce
  • 1/2 teaspoon of ground white pepper
  • 1/2 teaspoon of ground black pepper
  • Salt for seasoning (to taste)
  • 1 Teaspoon of garlic paste
  • 1 teaspoon of sweet paprika 
  • 3/4 cups of tomato sauce
  • 3 cups of water ( add more if needed)
  • 1/2 cup of Red Wine
  • 2 chouriços cut in rounds
  • 1500 grams frozen green fava beans, thawed
