These rectangular, pillow-shaped treats are made with flaky puff pastry and filled with a sweet almond and egg yolk cream. The dough is rolled thin, wrapped around the rich filling, and then baked until golden and crisp. The name "travesseiro" means "pillow" in Portuguese, reflecting their shape. Typically dusted with powdered sugar, they're known for their delicate texture and irresistible sweetness. They are often enjoyed with a cup of coffee or tea, especially when visiting Sintra’s historic bakeries like Piriquita, where they originated.

 

 

Ingredients:

  • 1 cinnamon stick
  • 1 1/4 cups of granulated sugar
  • 1/4 cup of water
  • 1 1/4 cups of almond flour
  • 6 egg yolks
  • 850 grams (2 sheets) of puff pastry (Each puff pastry sheet is 425 grams)
  • 1/4 cup of granulated sugar to coat the travesseiros
