These onions are often found in Portuguese households as a condiment, served alongside hearty dishes like grilled meats, bacalhau (salt cod), or other traditional fare. The pickling process enhances their flavor, giving them a sharp yet slightly sweet taste that complements rich, savory dishes. This recipe makes 5 to 6 (1 litre mason jars) of pickled onions

Ingredients per each 1 liter jar:

  • 1 garlic clove
  • 1 chili pepper
  • 1 teaspoon of salt
  • 3 parts vinegar
  • 1 part cold water
  • 2 to 3 tablespoons of red wine

i slice my large onions in wedges and stuff them in the jars....i use red wine vinegar 3/4 of the jar 1 tea spoon salt 2 sliced open chilly peppers the rest filtered water to the top SHAKE WELL let it sit3 days and enjoy.....
