Portuguese rice with peas and carrots is a flavorful rice dish often served with seafood, grilled meats, or hearty stews. It's made with onions, tomato sauce, paprika and fresh herbs, offering comforting, savory flavors.

 

 

Ingredients:

  • 1 small onion
  • 1/4 cup extra virgin olive oil
  • 1/4 cup tomato sauce or you can substitute with 1 tablespoon of tomato paste
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of hot pepper sauce
  • 1 cup of peas and carrots thawed
  • 2 cups of long grain rice
  • 4 cups of water
  • Salt for seasoning

4 to 6 servings
