Portuguese bean soup with collard greens is a hearty, flavorful soup that brings together earthy collard greens, tender red kidney beans, chouriço (a smoky Portuguese sausage), and a mix of vegetables, often including cabbage, carrots, and onions. Ingredients:

  • 8 leaves of Collard Greens
  • 1/2 of a small cabbage
  • 2 cups of red kidney beans boiled (you can use canned red kidney beans)
  • 2 carrots
  • 1 large onion
  • 1 chouriço
  • 2 cubes of Knorr chicken
  • 1/2 cup of olive oil
  • 1 cup of tube pasta (you can use potatoes instead of pasta)
  • Salt for seasoning
