Portuguese pork tenderloin with roasted potatoes is a flavorful dish featuring marinated pork tenderloin cooked to perfection alongside golden, crispy potatoes. This dish is simple yet hearty, perfect for family dinners or special occasions, offering a delightful combination of tender, juicy meat and rich, crispy potatoes. Ingredients:

  • 1 teaspoon ground black pepper
  • 1/2 teaspoon of ground white pepper
  • 2 tablespoons of hot pepper sauce
  • 1 tablespoon of (sweet) Paprika 
  • 1 cup of tomato sauce 
  • 1/2 cup of extra virgin olive oil
  • 2/3 cup of red wine
  • 2 teaspoons of minced garlic (or you can you fresh garlic finely chopped)
  • 34 mini Yukon gold potatoes (or you can use large 8 to 9 large potatoes cut in 4 pieces)
  • 2 large onions
  • 3 pork tenderloin (3 lbs)
  • Salt for seasoning (to your taste or liking)

Serves 6 to 8 people
