Portuguese napkin pastry, or "guardanapos," is a soft sponge cake folded into a triangular shape resembling a napkin. Filled with a rich egg custard (doce de ovos), it's a delightful, traditional dessert.

 

 

Ingredients:

  • 6 eggs at room temperature
  • 3/4 cups of granulated sugar
  • 3/4 cups of all purpose flour
  • 1 teaspoon of vanilla extract
  • 1/4 cup of granulated sugar to dust on parchment paper
  • 18 x 13 baking sheet
