Traditional and Tasty Portuguese Meat Stew Recipe
Ingredients
2 lbs of beef chuck, cut into 1.25-inch chunks
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
2 cups beef broth
1 cup red wine
2 bay leaves
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
Potatoes to taste, cubed
Carrots to taste, cubed
Preparation
Olive oil should be warmed in a large pot over medium heat. Add the onions and garlic, and sauté until they are softened and fragrant.
Add the beef and brown it on all sides, about 5-7 minutes.
Add the tomato paste and stir to coat the beef and vegetables.
Pour in the beef broth and red wine, and add the bay leaves, paprika, cumin, oregano and cinnamon and stir everything together.
The mixture should be heated until it boils, then it should be simmered for about an hour.
After an hour, add the potatoes and carrots to the pot. As desired, season the food with salt and pepper.
Simmer for another 30-40 minutes, or until the vegetables are tender and the beef is cooked through.
Serve hot, garnished with chopped parsley.
