Julieta's Portuguese Crispy and Tasty Cod Fritters
Ingredients
600g of salted cod
2 lbs of potatoes
4 eggs
1 medium-sized chopped onion
1 bunch of chopped parsley
Pepper to taste
Preparation
Boil the potatoes with the salted cod.
After cooking, drain everything well.
Clean the salted cod from skins and bones and shred it using your hands.
Mash the cooked poatoes.
In a bowl, combine the potatoes, salted cod, onion, and parsley, mix everything well, and season with pepper.
Add the beaten eggs and knead everything well.
Shape the patties with the help of 2 tablespoons and fry in hot oil.
Serve with a salad.
