Portuguese Papas Grossas
Ingredients
2 cups water
1 tsp salt
1 1/4 cups coarse cornmeal
1 cinnamon stick
4 cups milk
3/4 cup sugar
Ground cinnamon
Preparation
In a saucepan, combine the water and salt and bring to a boil.
Add the cornmeal and the cinnamon stick.
Let it cook, stirring constantly with a whisk, until the water is absorbed completely.
Gradually pour in the warm milk while stirring continuously, then add the sugar.
Cook for about 10 minutes or until the mixture reaches a creamy consistency.
Remove the cinnamon stick.
Remove the saucepan from the heat and pour the mixture into one or several individual bowls.
Before serving, garnish with cinnamon sticks and ground cinnamon.
