Preparation
Bring the codfish to a boil.
When the water boils, turn off the heat and let the codfish sit in the water for 5 minutes.
Remove and pat dry with kitchen paper.
Heat a frying pan with plenty of olive oil, the bay leaves, and two cloves of garlic.
When it's hot, add the codfish and fry until golden.
Remove to a serving dish and keep warm in the oven.
Meanwhile, prepare the onion sauce.
Slice the onions and garlic cloves and place them in the frying pan where you fried the codfish (remove the garlic and bay leaves).
Add the bell peppers in strips and the tomato in pieces.
Season with salt, pepper, and vinegar, and cook until the onion is soft.
Fry the potatoes in thick slices and place them around the codfish.
Cover with the onion sauce and serve accompanied by a mixed salad.
