Yummy Portuguese (JAG) Rice and Beans
Ingredients
1 tablespoon olive oil
1/2 medium onion, chopped
3 garlic cloves, minced
1 tablespoon tomato paste
3 cups water
1 1/2 cups rice, uncooked
2 bay leaves
1/2 tablespoon smoked paprika
1 teaspoon ground black pepper
1/2 teaspoon salt
1 (15 ounce can) kidney beans, drained and rinsed
Preparation
In a medium saucepan over medium-high heat, add olive oil.
Once heated, add onions and cook until softened and lightly browned, about 3-4 minutes.
Add garlic and cook for another 2 minutes, or until fragrant.
Add tomato paste and scrape the bottom of the pan using a wooden spoon, loosening up any browned bits from the bottom.
Add water, rice, bay leaves, and spices to the pan and bring to boil.
Reduce to simmer and cook until rice is soft and water is absorbed, about 10 minutes.
Add kidney beans and cook until heated through, about 1-2 minutes.
Fluff with fork before serving.
