Portuguese Cod with Onions (Bacalhau com Cebolada)
Ingredients
4 cod fillets1.75 pounds of potatoes2 onions3 garlic cloves3.4 ounces of tomato sauce (about 1/2 cup)6.8 ounces of olive oil (about 3/4 cup)2 tablespoons of vinegar1 bay leafOlives to tasteCoriander to tasteSalt and pepper to tasteFlour for dredgingOil for frying
Preparation
Soak the cod fillets in water ahead of time.
On the day of cooking, dry them with a kitchen towel and set them aside.
Peel and wash the onions and garlic cloves.
Slice the onions into thin half-moons and finely chop the garlic.
Peel and wash the potatoes, cut them into wedges, fry them in oil, and then drain them.
Heat a frying pan with the olive oil.
Dredge the cod fillets in flour, add them to the pan, and fry them on both sides.
