Portuguese Style Chili Peppers in Olive Oil
Ingredients
3 cups of chili peppers
1 cup of black peppercorns
4 cloves of garlic
2 1/2 cups of olive oil
2 bay leaves
2 small jars
Preparation
Wash the peppers, remove the stems and dry them thoroughly with paper towels and set aside.
Peel the garlic cloves, crush them, and set them aside.
In a saucepan, heat the olive oil over medium heat for about 5 minutes or until warmed.
Add the garlic and fry, stirring constantly, for 5 minutes or until golden.
Add the bay leaves and remove from heat.
Let the oil cool for 10 minutes.
In two sterilized glass jars with lids (each with a capacity of about 2 cups), create alternating layers of the peppers.
Pour the olive oil with garlic over the peppers until they are fully covered.
Seal the jars tightly, store the jars and wait for about 1 to 2 weeks before enjoying the peppers.
