Portuguese Bean Purée Soup with Spinach


Ingredients
4 to 5 potatoes5 to 6 carrots2 zucchinis (courgettes)2 onions2 garlic clovesOlive oil (enough to coat the ingredients)Salt (to taste)1 large can of butter beans (approx. 28 oz or 800 g)1 bag of spinach (pre-washed, about 6 oz)Small pasta (letters, elbows)
Preparation

  1. Place all the vegetables (potatoes, carrots, zucchinis, onions, garlic) in a pot with water and cook until they are soft.
  2. Add the butter beans and blend everything with an immersion blender until it becomes creamy.
  3. Bring the mixture back to a low simmer, add the spinach and small pasta, and cook until the pasta is done.
