4 to 5 potatoes5 to 6 carrots2 zucchinis (courgettes)2 onions2 garlic clovesOlive oil (enough to coat the ingredients)Salt (to taste)1 large can of butter beans (approx. 28 oz or 800 g)1 bag of spinach (pre-washed, about 6 oz)Small pasta (letters, elbows)
Preparation
Place all the vegetables (potatoes, carrots, zucchinis, onions, garlic) in a pot with water and cook until they are soft.
Add the butter beans and blend everything with an immersion blender until it becomes creamy.
Bring the mixture back to a low simmer, add the spinach and small pasta, and cook until the pasta is done.
