Portuguese Chickpea Tart (Tarte de Grão de Bico)
Ingredients
1 sheet puff pastry (store-bought)
1 1/4 cups sugar
3 tablespoons all-purpose flour
3/4 cup cooked chickpeas (about 4.5 oz)
1 1/2 tablespoons margarine, melted and cooled
2 large eggs + 2 egg yolks
Lemon zest, to taste
Powdered sugar, for dusting
Preparation
Preheat the oven to 350°F (180°C).
Place the cooked chickpeas in a blender or food processor and puree until smooth.
In a bowl, mix together the sugar, flour, chickpea puree, eggs, egg yolks, melted margarine, lemon zest, and cinnamon (if desired).
Stir well until the mixture is smooth and well combined.
Roll out the puff pastry and fit it into a pie pan, keeping the parchment paper under the dough to avoid greasing the pan.
Prick the bottom of the pastry with a fork.
Pour the chickpea filling over the pastry.
Generously sprinkle powdered sugar over the top—this will help create a crispy surface as it bakes.
Bake for about 30 minutes, or until the top is golden and crispy.
