Portuguese Roasted Cod with Potatoes and Olives


Ingredients
4 pieces of desalted codfish1 lb (500 g) potatoes, sliced into rounds1 large onion, sliced into rings3 garlic cloves, minced1/4 cup olive oil1/2 cup green olives2 tbsp fresh parsley, choppedJuice of 1/2 lemonBlack pepper, to tasteSalt, if needed (adjust depending on the saltiness of the cod)
Preparation

  1. Boil the potatoes in water with a pinch of salt for 8-10 minutes until tender but firm. Drain and set aside.
  2. Pat the cod pieces dry with a paper towel.
  3. In a baking dish, arrange the potato and onion slices.
  4. Drizzle with a little olive oil, sprinkle the minced garlic, and season with black pepper.
  5. Lay the codfish pieces on top of the potatoes and onions.
  6. Add the olives and drizzle everything with the lemon juice and the remaining olive oil.
  7. Preheat the oven to 400°F (200°C).
  8. Cover the dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for another 10-15 minutes, until the cod is golden and fully cooked.
  10. Remove from the oven and sprinkle with chopped parsley.
  11. Serve hot, accompanied by white rice or fresh bread.
