Flavorful Portuguese Tuna and Tomato Rice
Ingredients
2 cups (14 oz) rice
2 large round cans of tuna (about 10 oz each)
1 chopped onion
2 cloves garlic, minced
1 lb (17.5 oz) diced tomatoes
4 1/4 cups (1 quart) water
1/3 cup (3.4 fl oz) olive oil
1 bay leaf
Chopped parsley, to taste
Salt and pepper, to taste
8 hard-boiled eggs
Preparation
In a pot, heat the olive oil and sauté the chopped onion, minced garlic, and bay leaf. Add the peeled and chopped tomatoes and cook until they break down into a sauce.
Pour in the water, add a bit of chopped parsley, and season with salt and pepper. Once the broth starts boiling, add the rice and let it cook.
Meanwhile, boil the eggs and drain the tuna, flaking it with a fork.
When the rice is almost done, stir in the tuna and mix well. Turn off the heat.
Serve immediately, garnished with chopped boiled eggs and sprinkled with parsley.
