Preparation
Preheated the oven to 180°C (350°F).
Beat the eggs and sugar thoroughly until light and fluffy.
Add the orange zest, orange juice, and peanut oil, then mix well.
Sift the flour and baking powder together, then gently fold them into the mixture until well combined.
Pour the batter into paper cupcake liners placed in a muffin tin.
Bake until fully cooked (about 20 minutes), or until a toothpick inserted in the center comes out clean.
