Portuguese Port & Caramel Pudding Recipe
Ingredients
2 tbsp (25 g) sugar (for the caramel)
6 eggs
1 1/2 cups (300 g) sugar
2 tbsp cornstarch (Maizena)
1/4 cup (60 ml) Port wine
Zest of 1 lemon
2 cups (500 ml) whole milk
Preparation
Heat the 2 tablespoons of sugar until it melts into a golden caramel.
Pour it into the pudding mold and set aside.
In a bowl, combine the sugar, cornstarch, and lemon zest.
Mix in the Port wine and eggs, one at a time, beating well.
Gradually add the milk, mixing well.
Strain the mixture to remove lumps and pour it into the caramelized mold.
Place the pudding mold (covered with a lid or foil) inside a large pot with 1.2 inches (2-3 cm) of water.
Bake in a water bath at 400°F (200°C) for 1 hour.
Let it cool completely before unmolding.
