2 Portuguese spicy sausages (chouriço or linguiça)2 tablespoons of olive oil10 large eggsSalt (to taste) Chopped green onions or parsley (for garnish)
Preparation
Chop or slice the chouriço or linguiça (sausage) and cook in the olive oil in a nonstick skillet over medium heat, until browned or for about 5 minutes.
Whisk the eggs together in a bowl, season with salt and whisk a little more, add to the skillet with the chouriço and stir.
Cook, stirring, until the eggs are scrambled and set, about 5 minutes.
Garnish with the chopped green onions or parsley and serve while hot.
