Portuguese Coffee Flan (Pudim de Café)
Ingredients
1 cup of sugar
3 cups of milk
9 egg yolks
3 egg whites
1 teaspoon of cornstarch
6 tablespoons of freshly brewed espresso coffee
Liquid caramel
Preparation
Spread the liquid caramel all over the pudding form and set aside.
In a bowl, mix the egg yolks, whites and the sugar and beat well.
Add the cornstarch, the milk (cold), the coffee and beat well.
Pour into the form and bake in a water bath at 180°C or 350°F for about 30 to 40 minutes after it boils.
Remove from the oven, let it cool and place in the refrigerator.
Serve cool.
