I do not have a pressure cooker so do you have directions for cooking this on the stove top.

Sorry Lucille, my email was not working, I just got it to work today. Please always ask any question you might have about a recipe in the recipe page comments like you did with this one, I reply a lot faster then on Facebook.👍

It will take a little longer in a regular pot, here are the directions. 😊

  1. Sauté the aromatics: Heat a bit of oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant.
  2. Brown the meat: Add the meat to the pot and sear it on all sides for better flavor.
  3. Build the base: Stir in the carrot slices, crushed tomatoes, wine, salt, and pepper.
  4. Simmer: Add enough water to cover the meat. Bring to a boil, then reduce to a gentle simmer. Cover and let it cook for about 1.5 to 2 hours, or until the meat is tender. Stir occasionally and add more water if needed.
  5. Add chouriço and potatoes: Once the meat is tender, add the sliced chouriço and diced potatoes. Continue simmering, uncovered, for about 20 minutes until the potatoes are nearly cooked.
  6. Finish with peas: Add the peas and more water if necessary. Simmer for another 5–10 minutes until everything is cooked through.
  7. Taste and adjust seasoning before serving. This method ensures the meat becomes just as tender as in a pressure cooker but takes longer to develop flavors.

Enjoy! 😊
