Tasty Portuguese Beef and Vegetable Stew Recipe

Ingredients
2 lbs of Beef, cut into cubes1 lb of good quality potatoes2 medium carrots1/2 chouriço1 large onion2 garlic cloves1 cup of peas3/4 cup of white wine1/2 cup of crushed tomatoesWater (to taste)Salt (to taste)Pepper (to taste)Parsley (to taste)

Preparation
- Chop the onion and the garlic, cut the carrot into slices put all three in the pressure cooker along with the meat, the crushed tomatoes, the wine and a little salt and pepper (to taste).
- Add enough water to cover the meat and cook for about 30 minutes after boiling.
- Let the pan lose the pressure before you open it, then add the sliced chouriço and the potatoes cut into cubes (about the same size to cook equally), check for salt and pepper and let it cook without the lid on the pan.
- When the potatoes are almost cooked, add the peas, if necessary add a little more water.
- Let it simmer until the peas are cooked.
- Serve with chopped parsley and a few slices of homemade bread.

I do not have a pressure cooker so do you have directions for cooking this on the stove top.

It will take a little longer in a regular pot, here are the directions. 😊
- Sauté the aromatics: Heat a bit of oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant.
- Brown the meat: Add the meat to the pot and sear it on all sides for better flavor.
- Build the base: Stir in the carrot slices, crushed tomatoes, wine, salt, and pepper.
- Simmer: Add enough water to cover the meat. Bring to a boil, then reduce to a gentle simmer. Cover and let it cook for about 1.5 to 2 hours, or until the meat is tender. Stir occasionally and add more water if needed.
- Add chouriço and potatoes: Once the meat is tender, add the sliced chouriço and diced potatoes. Continue simmering, uncovered, for about 20 minutes until the potatoes are nearly cooked.
- Finish with peas: Add the peas and more water if necessary. Simmer for another 5–10 minutes until everything is cooked through.
- Taste and adjust seasoning before serving. This method ensures the meat becomes just as tender as in a pressure cooker but takes longer to develop flavors.
