Ingredients
2.2 lbs (1000 gr) of flour1.65 lbs (750 gr) of sweet potatoes2 tablespoons (28 gr) of active dry yeast1 pinch of saltWater (150 ml)

Preparation
- Peel the potatoes, boil them in water and reduce them to puree.
- Add the yeast into a little water (aprox 150 ml) and add the salt as well.
- Place the flour on a clean surface, open a hole in the middle and place the sweet potatoes and yeast.
- Knead well and let the dough ferment for 2 to 3 hours.
- Divide the dough into small portions and flatten them (on a floured surface).
- Then cook the caco cakes on a hot skillet on both sides.
Suggestion: You can brush the cakes with garlic butter and sprinkle them with chopped parsley and a little salt.

I had this in Funchal last week and can't wait to make it myself. Going to make it tomorrow evening for my garlic bread-loving granddaughters. In Funchal, they made it with oil for me, rather than butter, as I am a vegan 🥰 I will make it with vegan-friendly butter. I will update after I have made it.
