Ingredients

1 (14 1/2 ounce) canfire roasted diced tomatoes4 red potatoes, quartered8 ounces chourico sausage, sliced 1/2-inch thick1 cup quartered pepper1 stalk celery, thinly sliced, 1/2 cup1⁄2 cup white wine1⁄2 cup water1⁄4 cup finely chopped onion1⁄2 teaspoon smoked paprika1⁄2 teaspoon minced garlic1⁄4 teaspoon salt1⁄4 teaspoon thyme1 lb medium shrimp, peeled and deveined

Get Portuguese ingredients

Preparation

  1. Place all ingredients in crock pot except for shrimp. Gently stir until well combined and vegetables are covered in cooking liquid. Cover and cook on low 6 to 9 hours until veggies are tender.
  2. Turn heat to high and add shrimp pushing them under the liquid. Cover and cook for an additional 15 minutes or until shrimp are cooked through. Garnish with coriander.

I made this but cooked it on the stove top. I also put in sliced garlic instead of minced. This was delicious with some hot, crusty bread. Easy to make.
