1 lb of shrimp, peeled and deveined1 onion, chopped4 cloves of garlic, minced2 tomatoes, chopped1/2 cup of tomato sauce1/2 cup of coconut milk1/2 cup of water2 tbsp of olive oil1 tbsp of paprika1 tbsp of cumin1 tbsp of chili powderSalt and pepper, to tasteFresh coriander, chopped (optional)

Preparation

 

  1. In a squilet over medium heat, add the chopped onion and minced garlic and cook until the onion is translucent and the garlic is fragrant.
  2. Add the chopped tomatoes, tomato sauce, paprika, cumin, chili powder, salt, and pepper, and stir to combine.
  3. Stir the shrimp into the sauce in the skillet. Stir in the water and coconut milk after adding them. Bring the mixture to a simmer and cook for 5-7 minutes, or until the shrimp is cooked through.
  4. Taste the sauce and make any necessary spice adjustments.
  5. Serve the Portuguese Shrimp Mozambique over rice or with bread, garnished with chopped coriander if desired. Enjoy!
