Ingredients
1 lb of shrimp, peeled and deveined1 onion, chopped4 cloves of garlic, minced2 tomatoes, chopped1/2 cup of tomato sauce1/2 cup of coconut milk1/2 cup of water2 tbsp of olive oil1 tbsp of paprika1 tbsp of cumin1 tbsp of chili powderSalt and pepper, to tasteFresh coriander, chopped (optional)

Preparation
- In a squilet over medium heat, add the chopped onion and minced garlic and cook until the onion is translucent and the garlic is fragrant.
- Add the chopped tomatoes, tomato sauce, paprika, cumin, chili powder, salt, and pepper, and stir to combine.
- Stir the shrimp into the sauce in the skillet. Stir in the water and coconut milk after adding them. Bring the mixture to a simmer and cook for 5-7 minutes, or until the shrimp is cooked through.
- Taste the sauce and make any necessary spice adjustments.
- Serve the Portuguese Shrimp Mozambique over rice or with bread, garnished with chopped coriander if desired. Enjoy!
