Ingredients
4 cups of all purpose flour1 3/4 cups granulated sugar1 teaspoon of baking powder1 teaspoon of baking soda4 eggs at room temperature1/2 cup melted butter (unsalted)1/3 cup vegetable oilJuice of 1 lemonZest of 1 lemon

Preparation
- In a large bowl, start by combining all the dry ingredients, all purpose flour, sugar, baking powder and baking soda (stir all the dry ingredients).
- In the same bowl add the eggs, butter, vegetable oil, lemon juice and lemon zest.
- Form dough by combining all ingredients with your hands and bring dough together until it forms into a rolling consistency.
- Once dough comes together, set it aside for 30 minutes to let the dough rest.
- Preheat the oven to 350F of 180C.
- Remove a piece of dough and form into a log.
- Take small peices from the log and form into a small balls and start rolling each into a thinner log (size to taste) and bring both ends together to form a round circle. (To form the biscoito, press small piece of dough slightly with one hand and then stretch out the dough with 2 hands and form into a thinner log and bring the 2 end pieces together)
- Place the formed biscoitos on a baking sheet with parchment paper, or use non stick baking spray.
- Place the biscoitos 2 inches apart when placing it on baking tray.
- Bake for 12 to 14 minutes.
TIP:
Start by placing the 1st tray of biscoitos in the bottom rack of the oven. After 4 minutes, move it up to the middle rack, and after another 4 minutes place on top rack( (if you prefer the biscoitos a dark golden colour leave the top tray in the oven for an additional 2 to 3 minutes)
