  1. In a baking dish, season the pork chops with salt, sweet paprika, piri piri sauce and half of the chopped garlic.

  3. Season the other side with salt, sweet paprika, piri piri sauce and the remaining garlic.
  4. Pour the white wine over everything.
  5. Cover the baking dish with cling film and let it marinate for 1 hour.
  6. In a frying pan, heat pork lard or butter and olive oil.
  7. When hot, place 2 chops with the bay leaves facing down and fry for about 1 minute until they gain color.
  8. Flip them and fry for another minute.
  9. Remove the chops to a serving dish and fry the remaining ones the same way.
  10. Once the chops are golden, transfer them back to the baking dish.

  12. Stir with a wire whisk and gradually add the marinade.
  13. Once everything is well mixed, place the chops back in the pan.
  14. Cover and let them cook over medium heat for 5 minutes.
  15. Flip the chops, cover, and cook for another approximately 3 minutes until the sauce thickens.
  16. When the sauce is well reduced, coat the chops thoroughly with the sauce, and finally, add the vinegar.
  17. Once everything is well combined, remove from heat and serve with homemade fries and rice.
