5 eggs50 ml of milkGrated cheese, to taste12 green olives with pimentosFreshly chopped chives, to taste1/2 chopped onion1 chourico, cut into small cubes3 mushrooms, slicedOlive oil, to tastePepper, to taste

Preparation

  1. Start by sautéing the onion, chourico and mushrooms in a pan with a drizzle of olive oil.
  2. Once the mushrooms are cooked, remove everything and set aside.
  3. In a deep bowl, whisk the eggs together with the milk, the grated cheese, chopped chives, and olives sliced into rounds.
  4. Next, combine the mushrooms and onion mix to the eggs and place them in a baking dish.
  5. Bake in the oven at 200ºC or 392ºF for about 20 minutes.
