Ingredients

3 eggs (medium size)175g of sugar1 sweetened Greek yogurt (125g)50 ml of orange juiceZest of 1 orange150g of sunflower oil250g of flour1 teaspoon of baking powder1 apple2 carrotsSugar for sprinkling

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. Grate the apple and the carrots.
  3. Separate the egg yolks from the egg whites.
  4. Beat the egg whites until stiff peaks form and set aside.
  5. Beat the egg yolks with the sugar until they double in volume and obtain a fluffy, whitish cream.
  6. Add the oil, orange juice, yogurt, and zest, mix well.
  7. Gradually add the sifted flour with the baking powder, mix, then add the grated apples and carrots.
  8. Mix everything well and finally fold in the egg whites.
  9. Pour the mixture into a buttered and floured pan.
  10. Sprinkle sugar on top and bake for 45 minutes.
  11. Perform the toothpick test.
  12. Remove from the oven and unmold while warm.
