Ingredients
2 pounds of veal, cubed1/2 chouriço sausage1 onion1 green bell pepper1 orange bell pepper1/4 of a pineappleSeasoning:3 garlic clovesCoarse salt to taste1/2 teaspoon of ground bay leaf1 teaspoon of smoked paprikaFresh parsley (to taste)Olive oil

Preparation
- In a mortar, crush the garlic with the salt until it forms a paste.
- Add the bay leaf, paprika, and parsley, crush again, and then add olive oil to bind everything together and set aside.
- Cut all the ingredients for the skewers so they are the same size.
- Assemble the skewers by first placing the bell pepper, onion, sausage, pineapple, and veal, repeating at least twice.
- Brush the skewers on all sides with the reserved seasoning.
- Heat the grill (stovetop or electric), and when it's very hot, grill the skewers on all sides, brushing with the remaining sauce.
- Serve immediately, accompanied by oven-baked fries or any other side dish you prefer.
