Ingredients

4 cups vegetable oil2 large sweet onions, cut into 1/4-inch rounds1 cup all-purpose flour3/4 teaspoon baking powder1 1/2 teaspoons seasoned salt, plus extra for seasoning3/4 cups milk (or as needed)2 eggs, lightly beaten2 cups bread crumbs

Get Portuguese ingredients

Preparation

  1. Heat the oil in a deep fryer or deep skillet to 365 F.
  2. Carefully separate the rings from each other, keeping only the larger rings.
  3. Combine the flour, baking powder, and seasoned salt in a medium-sized bowl.
  4. Coat each onion ring in the flour mixture and set aside.
  5. Combine the remaining flour mixture with the milk and egg, and beat well until no lumps remain.
  6. Pour the panko bread crumbs into a shallow bowl.
  7. Dip each onion ring into the batter and shake off the excess. Dip the onion rings into the panko bread crumbs to fully coat.
  8. Deep fry the onion rings, a few at a time, for 4 to 5 minutes, flipping halfway, or until golden brown. Remove to a wire rack to allow the excess oil to drain.
  9. Season with more seasoning salt, if desired, and serve immediately.
