Ingredients

4 pieces of anglerfish (approximately 600 g)1 onion2 garlic cloves1 bay leaf70 ml of olive oil3 ripe tomatoes1/4 red bell pepper300 g of Arborio rice950 ml of fish broth (from cooking the fish)200 g of shrimpSalt and black pepper to taste1 bunch of coriander

Get Portuguese ingredients

Preparation

  1. Season the anglerfish with a little salt and cook in a pot of water.
  2. Once cooked, remove the skin and bones from the fish and reserve the broth.
  3. In a separate pot, sauté the chopped onion and garlic cloves with olive oil and bay leaf over medium heat.
  4. Cook until the onion becomes translucent.
  5. Add the diced red bell pepper and tomatoes, peeled and deseeded, to the pot.
  6. Sauté for a few more minutes.
  7. Pour in the fish broth.
  8. Once it starts boiling, add the Arborio rice.
  9. When the rice is almost cooked, add the anglerfish and shrimp.
  10. Season with salt and pepper to taste.
  11. Serve the rice garnished with freshly chopped coriander.
