4 cod fillets1.75 pounds of potatoes2 onions3 garlic cloves3.4 ounces of tomato sauce (about 1/2 cup)6.8 ounces of olive oil (about 3/4 cup)2 tablespoons of vinegar1 bay leafOlives to tasteCoriander to tasteSalt and pepper to tasteFlour for dredgingOil for frying

Get Portuguese ingredients

Preparation

  1. Soak the cod fillets in water ahead of time.
  2. On the day of cooking, dry them with a kitchen towel and set them aside.
  3. Peel and wash the onions and garlic cloves.
  4. Slice the onions into thin half-moons and finely chop the garlic.
  5. Peel and wash the potatoes, cut them into wedges, fry them in oil, and then drain them.
  6. Heat a frying pan with the olive oil.
  7. Dredge the cod fillets in flour, add them to the pan, and fry them on both sides.
  8. Remove the cod from the pan and set aside.
  9. Discard half of the olive oil from the pan.
  10. Add the onion, garlic, and bay leaf to the pan and sauté until golden.
  11. Add the tomato sauce, season with salt and pepper, and cook a bit more until soft.
  12. Add the vinegar, stir, and let it boil.
  13. Add the cod back to the pan, stir to coat with the sauce, remove from the heat, and transfer to a serving dish.
  14. Add the fried potatoes, decorate with olives and chopped coriander, and serve.
