7 tablespoons (1 stick) of butter7 tablespoons (1/2 cup) of sugar1 egg1 teaspoon of instant coffee2 1/2 cups of flour1 teaspoon of baking powder1 small cup of coffee (about 2 fluid ounces)ConfectionersGranulated sugar, to taste

Preparation

  1. In a bowl, combine the sugar, melted butter, and slightly beaten egg and mix everything with a wooden spoon.
  2. Gradually add the sifted flour with the baking powder, and finally, mix in the coffee and instant coffee powder.
  3. Wrap the dough in plastic wrap and let it rest in the refrigerator for one hour.
  4. After this time, line a baking sheet with parchment paper.
  5. Preheat the oven to 350°F (180°C).
  6. Take pieces of dough with a teaspoon, form small balls, and roll them first in granulated sugar and then in confectioners' sugar.
  7. Place on the baking sheet and bake at 350°F for up to 15 minutes.
  8. The cookies should form small cracks as seen in the photo.
  9. Do not remove the cookies from the baking sheet immediately, wait a few minutes as they are very soft.
  10. Dust the cookies with confectioners' sugar and serve.
