Cake:2 cups all-purpose flour2 cups granulated sugar3/4 cup unsweetened cocoa powder2 teaspoons baking powder1 ½ teaspoons baking soda1 teaspoon salt1 teaspoon espresso powder1 cup milk1/2 cup vegetable oil2 large eggs2 teaspoons vanilla extract1 cup boiling waterFrosting:1 can (14 oz) sweetened condensed chocolate milk2 large eggs1/3 cup (3.4 oz) milk1 teaspoon cornstarch

Preparation

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
  3. Add the milk, vegetable oil, eggs, and vanilla extract and mix well with a mixer on medium speed.
  4. Reduce the speed and carefully add the boiling water and beat on high speed for about 1 minute.
  5. Divide the batter evenly between two cake pans and bake for about 30 minutes.
  6. Once baked, let the cakes cool for 10 minutes before removing them from the pans to cool completely.
  7. Frosting:
  8. Combine all the ingredients in a saucepan and cook over medium heat until the mixture thickens to your desired consistency.
  9. Allow the filling and frosting to cool completely.
  10. Place the first cake layer on a serving plate and spread a generous layer of frosting.
  11. Place the second cake layer on top and frost the entire cake.
