4.4 lbs pork loin with bone (remove the bone)1/2 fresh pineappleOil as neededPotatoes, salt, and paprikaFor the Marinade:6 crushed garlic cloves2 tablespoons red pepper pasteSalt and black pepper to taste1 cup white wine (approximately 8.5 fl oz / 250 ml)Parsley and bay leaves

Preparation

  1. Season the pork loin with the marinade and let it sit, preferably overnight.
  2. Preheat the oven to 350°F (180°C).
  3. Place the sliced pork in a baking dish along with the marinade.
  4. Add the potatoes seasoned with salt and paprika, and drizzle with some oil and place in the oven.
  5. Turn the meat halfway through cooking, basting occasionally with the juices that evaporate as it roasts.
  6. When done, transfer the slices and potatoes to a new baking dish with some of the juices.
  7. Place 1/2 slice of pineapple between each pork slice and bake for another 15 minutes.
  8. Remove from the oven and serve.
