Ingredients

1 teaspoon of cinnamon1/2 cup of olive oil (120 ml)1/2 cup + 1 tablespoon of sugar (120 g)4 eggs4 cups of all-purpose flour (500 g)Sugar and cinnamon for sprinkling

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. Beat 2 whole eggs and 2 yolks with the sugar and cinnamon.
  3. Add the olive oil, continue beating, and gradually add the flour while beating continuously.
  4. Dust your hands with flour and roll the dough into small ropes.
  5. Shape them into fat "S" shapes (not flattened).
  6. Place the biscuits on a baking tray, lightly greased and dusted with flour.
  7. Brush them with beaten egg whites and sprinkle with sugar and cinnamon.
  8. Bake for about 20 minutes.

Note: If you wish to store the biscuits, let them cool completely before placing them in an airtight container.
