Ingredients

1 orange (juice and zest)1 egg4 tablespoons of sugar1/4 cup (60 ml) sunflower oil1 cup (140 g) all-purpose flour1 1/2 teaspoons (8 g) baking powderOrange jam to taste (as needed)Shredded coconut to taste (as needed)

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix together all the ingredients except the jelly/jam and shredded coconut.
  3. Pour the mixture into cupcake pan molds and bake for 15 to 20 minutes (check for doneness using the toothpick test).
  4. Once baked, remove from molds, brush with the jam, and sprinkle with shredded coconut.

Note: The baking time will depend on the amount of batter you put in the molds.
