Ingredients

2 pieces of soaked codfish (about 10-12 oz each)6 potatoes, peeledOil (enough for frying)3 cloves garlic2 small onions1 tsp black pepper1 bay leaf1 tbsp vinegarFlour (enough to coat the cod)1/2 red bell pepperSalt (to taste)Fresh parsley (to taste)3/4 cup (150 ml) olive oil

Get Portuguese ingredients

Preparation

  1. Rinse the soaked cod under cold water, pat it dry with paper towels, and then coat it with flour.
  2. In a hot skillet with oil, fry the codfish pieces until golden brown.
  3. Once done, transfer them to a serving plate and keep them warm in the oven.
  4. Wash, peel and slice potatoes into thick rounds.
  5. Season with salt and fry in hot oil until golden brown and set aside.
  6. Slice the onions and garlic thinly.
  7. In a skillet with hot olive oil, sauté the onions, garlic, bay leaf, and sliced red bell pepper.
  8. Season with salt, paprika, and black pepper.
  9. Add chopped parsley and vinegar.
  10. Let it simmer for 5 minutes, then remove the bay leaf.
  11. Place the fried potatoes around the codfish.
  12. Pour the onion-garlic sauce over the cod and potatoes.
  13. Serve with a mixed salad on the side.
