1.76 lbs (800 g) codfish1.1 lbs (500 g) potatoes1 finely chopped onion2 eggsChopped parsley (to taste)Salt and pepper (to taste)

Preparation

  1. Boil the potatoes and the codfish.
  2. Once they are cooked, drain the potatoes and mash them using a potato ricer and set aside in a bowl.
  3. While the potatoes are cooling, clean the codfish by removing the skin and bones.
  4. Shred the cod using a clean kitchen towel (this will help absorb excess moisture and ensure the cod remains dry).
  5. Add it to the bowl with the mashed potatoes.
  6. Mix in the parsley, onion, salt, and pepper.
  7. Start incorporating the eggs one at a time.
  8. Continue mixing until the batter reaches the right texture.
  9. Depending on the potatoes (some retain more water), you might need more or fewer eggs.
  10. Let the mixture rest in the fridge for at least 1 hour.
  11. To form the cod fritters, use two spoons to shape them or form them by hand.

Tip: Don’t fry more than 4-5 fritters at a time. Overloading the pan will lower the oil temperature, causing the fritters to absorb more oil and become greasy.
