Ingredients

1 vegetable bouillon cube3 tablespoons of water1/2 cup lemon juiceSalt to taste2 cups small shrimp, peeled2 cups tomato sauce3 tablespoons chopped parsleyAll-purpose flour, for dustingOil, for frying2.2 lbs (1 kg) sole fillets2 tablespoons oil1 tablespoon minced garlic1 chopped onion1 bay leaf Get Portuguese ingredients

Preparation

  1. Dissolve the vegetable bouillon cube in hot water and mix it with the lemon juice.
  2. Sprinkle salt over the fillets and place them on a tray.
  3. Pour the lemon mixture (cooled) over the fillets and let them marinate for 15 minutes.
  4. In a pan, heat 2 tablespoons of oil, then sauté the garlic, onion, and bay leaf until fragrant.
  5. Add the shrimp and cook until they are well-fried.
  6. Stir in the tomato sauce and, once it starts to simmer, adjust the salt, turn off the heat, and add the parsley.
  7. Drain the fillets from the marinade, lightly dust them with flour, and press gently to coat.
  8. In a heated skillet with a bit of oil, fry the fillets until golden brown.
  9. Pour the shrimp sauce over the fillets and sprinkle with parsley.
  10. Serve with white rice if desired.
