2.2 lbs pumpkin (about 1 kilogram)Salt, to taste4 large eggs2 3/4 cups all-purpose flour (350 grams)6 tablespoons sugar1 teaspoon baking powder1/3 cup or 80 ml of brandyZest and juice of 1 orange1 teaspoon cinnamonSugar and cinnamon, mixed

Preparation

  1. Peel and clean the pumpkin.
  2. Place it in a pot, cover with water, and add a pinch of salt.
  3. Boil until well-cooked, then drain and mash it into a smooth purée.
  4. In a separate bowl, beat the eggs, then add them to the pumpkin purée.
  5. Mix in the sugar, cinnamon, flour, baking powder, orange zest, orange juice, and brandy and stir until well combined.
  6. Heat oil in a deep skillet or pot.
  7. Once the oil is hot, drop spoonfuls of the batter into the oil and fry until golden brown.
  8. Remove and place on paper towels to drain.
  9. Toss the warm fritters the a mixture of sugar and cinnamon.
