Ingredients
2.2 lbs pumpkin (about 1 kilogram)Salt, to taste4 large eggs2 3/4 cups all-purpose flour (350 grams)6 tablespoons sugar1 teaspoon baking powder1/3 cup or 80 ml of brandyZest and juice of 1 orange1 teaspoon cinnamonSugar and cinnamon, mixed

Preparation
- Peel and clean the pumpkin.
- Place it in a pot, cover with water, and add a pinch of salt.
- Boil until well-cooked, then drain and mash it into a smooth purée.
- In a separate bowl, beat the eggs, then add them to the pumpkin purée.
- Mix in the sugar, cinnamon, flour, baking powder, orange zest, orange juice, and brandy and stir until well combined.
- Heat oil in a deep skillet or pot.
- Once the oil is hot, drop spoonfuls of the batter into the oil and fry until golden brown.
- Remove and place on paper towels to drain.
- Toss the warm fritters the a mixture of sugar and cinnamon.
