2 cups all-purpose flour (250 g)4 tablespoons olive oil (60 ml)3 tablespoons orange juice (50 ml)Orange zest, to taste1/3 cup sugar (60 g)1/2 packet baking powder (7 g, about 1 1/2 teaspoons)2 eggsOrange and lemon peel (for infusing the oil)Sunflower oil (for frying)Sugar (for dusting)

Preparation

  1. Place the olive oil in a small saucepan. Add several pieces of orange peel and a piece of lemon peel (remove the white pith to avoid bitterness).
  2. Heat the oil over medium heat until the peels start to brown lightly. Remove from heat and allow the oil to cool. Once cooled, remove and discard the peels.
  3. In a large bowl, combine the eggs, orange zest, orange juice, baking powder, the infused olive oil, and mix well.
  4. Gradually add the flour, mixing until the dough is smooth and free of lumps.
  5. Knead lightly until the dough is elastic. Cover with a clean towel and let it rest for about 30 minutes.
  6. After resting, take small pieces of dough and shape them into rings. If the dough sticks to your hands, rub a little sunflower oil on your palms.
  7. Heat sunflower oil in a deep pan or skillet over medium heat. Fry the dough rings on both sides until golden brown.
  8. Remove and place on paper towels to drain excess oil.
  9. While still warm, roll the fried rings in sugar to coat them.
