1 sheet of puff pastry (for pie)280 g (10 oz) canned white beans (1 small can)350 g (1 1/3 cups) sugar80 g (2/3 cup) all-purpose flour80 g (1/3 cup) margarine5 eggs100 g (1 cup) shredded coconutZest of 1/2 lemonExtra sugar for sprinkling

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the puff pastry and place it into a pie pan and prick the base with a fork and set aside.
  3. Drain and rinse the canned white beans thoroughly and mash or purée the beans until smooth.
  4. In a large bowl, combine the bean purée with the remaining ingredients (sugar, flour, margarine, eggs, coconut, and lemon zest).
  5. Mix very well until the batter is completely smooth.
  6. Pour the batter into the pie pan, sprinkle with sugar, and bake for about 35 minutes or until golden brown.
